Because cows in the US are bred for specific purpose. Female cows are for milk production and end up in pet food and other animal byproducts chain after their milk production drops below certain level. Male cows, the bulls, are raised for beef only. Over the past few decades, aggressive genetic selection has produced very distinctive breeds, namely, Holstein, Jersey, Angus and Brown Swiss. Since these animals are bred for a specific purpose, farmers make sure that breeds don’t mix since each has its own distinctive and desirable traits.
Wondering why I know all this? We have a summer home in Wisconsin, dairy land of the US. I get to mingle with the local farmers and chew some fat in local eateries. Most of them get very excited to know that I am from Pakistan; since most of them initially assume that I am a Mexican national.
